ChemCentre has built a strong capability in allergen research with several investigations recently completed, including dairy, a contamination of coconut milk, and the presence of gluten in international foods.
The results of the gluten in international foods were presented at the 12th International Gluten Biotechnology Workshop held in Perth in September 2015.
As a result of this conference, an industry and research consortium was formed focusing on wheat protein and the gluten-coeliac connection. The consortium has focussed on post-harvest techniques to eliminate peptides responsible for gluten intolerance.
The consortium is hosting a Royal Society of Victoria seminar in Melbourne on 17 March to outline background information in this area and to map a research pathway.
